DIY Banana Bread

From time to time we have bananas that go "bad" and the only thing to do is feed those bananas to the worms or make bread. Sometimes I am lazy and will just feed them to the worms; but most times I make bread. Here is the recipe I use. Keep in mind I live in a high elevation area so I do not know how this will cook up for people at sea level.

What you will need:

  • 1 cup all-purpose flour
  • 2/3 cup bread flour (I like whole wheat)
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 3/4 cup granulated sugar (can add up to a cup if you want it sweeter)
  • 2 eggs
  • 1/2 cup Olive oil
  • 3–4 very ripe bananas, peeled & mashed
  • 3 tablespoons greek yogurt
  • 1 1/2 teaspoon vanilla extract
  • 2/3 cup toasted walnuts (if you want to add them)


How to whip it up:

  1. Preheat your oven (yes to 350F lol).
  2. Prep your loaf pan with butter and set to the side.
  3. Mash bananas and set to the side for later.
  4. Sift together flours, baking soda, cinnamon and salt in a medium bowl.
  5. Beat sugar, eggs, and oil until light and fluffy. Stir in mashed bananas, vanilla and greek yogurt.
  6. Gently mix in dry ingredients (a little at a time) and nuts.
  7. Pour your delicious batter into your loaf pan and bake for 45 minutes. Your bread may not be done so you'll want to allow it to cook until a toothpick comes out clean when placed in the center of the bread.
  8. Remove bread from your oven, hit the top with some butter, let it cool and then eat up!!
