From time to time we have bananas that go "bad" and the only thing to do is feed those bananas to the worms or make bread. Sometimes I am lazy and will just feed them to the worms; but most times I make bread. Here is the recipe I use. Keep in mind I live in a high elevation area so I do not know how this will cook up for people at sea level.
What you will need:
- 1 cup all-purpose flour
- 2/3 cup bread flour (I like whole wheat)
- 3/4 teaspoon baking soda
- 3/4 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 3/4 cup granulated sugar (can add up to a cup if you want it sweeter)
- 2 eggs
- 1/2 cup Olive oil
- 3–4 very ripe bananas, peeled & mashed
- 3 tablespoons greek yogurt
- 1 1/2 teaspoon vanilla extract
- 2/3 cup toasted walnuts (if you want to add them)
How to whip it up:
- Preheat your oven (yes to 350F lol).
- Prep your loaf pan with butter and set to the side.
- Mash bananas and set to the side for later.
- Sift together flours, baking soda, cinnamon and salt in a medium bowl.
- Beat sugar, eggs, and oil until light and fluffy. Stir in mashed bananas, vanilla and greek yogurt.
- Gently mix in dry ingredients (a little at a time) and nuts.
- Pour your delicious batter into your loaf pan and bake for 45 minutes. Your bread may not be done so you'll want to allow it to cook until a toothpick comes out clean when placed in the center of the bread.
- Remove bread from your oven, hit the top with some butter, let it cool and then eat up!!
